Pumpkin Cake
Ingredients :
Refined Flour/Maida 75 gms
Powdered Sugar 75 gms
Butter 60 gms
Baking powder 1/4 tsp
Corn Flour 1 tbsp
Eggs 3 nos
Pumpkin 100 gms
Mixed Spices 1 tsp
Salt a pinch
Vanilla essence few drops
Vanilla custard for garnish
Chocolate custard for garnish
Serves : 4
Cooking Time : 20 minutes
Method :
Refined Flour/Maida 75 gms

Cooking Time : 20 minutes
Method :
- Sieve refined flour, salt baking powder and corn flour twice.
- Make a puree of the red pumpkin.
- Cream the butter & sugar until sugar dissolves.
- Add the eggs one by one and cream until it becomes light and fluffy.
- Add the sieved refined flour, pumpkin puree, spice powder & vanilla essence.
- Pour the mixture into a greated microwave tray and microwave for 20 minutes on medium power.
- Serve hot garnished with glazed cherries, vanilla & chocolate hot custard.
